Soil squid and horseshoe steamed meat pie

土魷馬蹄蒸肉餅 - On Hing Dry Seafood

80g squid, 7 horseshoes, 250g ground pork, 1 tbsp cooking wine, 1 tbsp soy sauce, 1 tsp sugar, proper amount of pepper, 1 tsp cornstarch, 1 tbsp oil

1. Soak the golden squid until soft (30-45 minutes), tear off the eyes, mouth, red skin and cartilage; cut into pieces, and chop the horseshoe as desired.
2. Put the squid and water chestnut into the pig meat, then add 1 tablespoon of soy sauce, 1 teaspoon of sugar, appropriate amount of pepper, and 1 tablespoon of cooking wine; if it is too difficult to stir, add a small amount of water; add cornstarch water and stir well , and finally add the oil and stir well.
3. Put the patty on the plate and spread it flat, not too thick/thin, steam for 7-8 minutes, take it out, add soy sauce and cooked oil according to your preference when eating.

:: Small Tip for Steamed Meat Patties ::
1. There is no need to stir to make meat patties, the glue is formed into meatballs.
2. The red skin of the squid must be removed, the taste is bad and tough.

3. To make the patty tender and smooth, water must be added. If it is too difficult to stir, it is too dry, and a small amount of water needs to be added.
4. Never cover with plastic wrap to steam.
5. The patties are steamed, and the gravy is clear in color. If you are worried that it is still undercooked, you can cut it open and have a look.
