撈飯撈麵撈粥炒蛋都極之合適!健康不加味精之選!

材料:特級蝦米250克,菜脯400克,乾蔥2個,蒜頭2個,辣椒5隻,辣椒粉1湯匙,蠔油1湯匙,糖1湯匙,鹽半茶匙,油8湯匙

做法:

  1. 洗淨蝦米,暖水浸軟;菜脯洗淨再用熱水浸軟及減少鹽份
  2. 蒜頭去皮備用,乾蔥去皮切塊
  3. 蝦米隔水瀝乾(蝦米水留起可煮其他菜式/ 做湯基底);菜脯隔水瀝乾
  4. 蒜頭打成蓉,乾蔥打成蓉;一半蝦米打成蓉,一半原粒蝦米,增加口感; 菜脯打碎;辣椒切細粒
  5. 白鑊放菜脯煎乾煎香,出鍋備用
  6. 下油熱鍋,放入蝦米炒香,放入蝦米蓉炒香;放入蒜蓉及乾蔥蓉炒均炒香,放入辣椒粒及粉,炒均炒香,放入菜脯繼續炒均炒乾及炒香
  7. 放入蠔油,糖及鹽,最後一次炒均即可
