土魷馬蹄煎肉餅 - On Hing Dry Seafood

材料:
金錢土魷80g、馬蹄10個、豬絞肉250克、料酒1湯茶匙、豉油1湯匙、糖1茶匙、胡椒粉適量、生粉1茶匙、油1湯匙

做法:
1. 金錢土魷浸泡至軟身(1-2小時),撕去眼、嘴部、紅皮及軟骨;切成小塊,馬蹄隨意切碎。
2. 將土魷塊、馬蹄放入豬狡肉,再加入豉油1湯匙、糖1茶匙、胡椒粉適量、料酒1湯茶匙;如果太難攪動,加入少量水,加入生粉水,攪拌均勻,最後加入油攪拌均勻。
3. 湯匙及手沾水將肉餡搓成肉球;加油熱鑊,將肉球放入煎30秒,用鑊鏟壓平,翻另一面煎1分鐘,可加入很少量水,蓋上蓋煎1分鐘,即可取出食用。

:: 蒸肉餅小Tip ::
1. 做肉餅無需攪拌起膠,起膠為肉丸之做法。
2. 肉餅要嫩滑,必需加入水,如果太難攪動,就是太乾了,需加入少量水。
